2003 SPARKLING CABERNET SAUVIGNON

Colour

Deep, dense red - very typical of Cape d'Estaing wines. With its streams of fine bubbles, it looks wonderful in a tall sparkling glass.
Nose
Rich full complex aromas. It has lifted, distinctively cabernet sauvignon varietal aromas which are leafy and chocolatey. Hints of very attractive oak.
Palate
The palate is full bodied and very flavoursome, with rich berry flavours alongside some lovely oak. Like its predecessors, it is relatively dry for a sparkling red wine, and the fine, persistent bead forms a soft, gentle mousse. This is a complex and rich style of sparkling red.
Oak
The wine has seen prolonged oak maturation - nearly 30 months. We believe that the base wine must be fully complex and developed before it goes into bottle for it to reach its full potential. This wine saw predominantly French oak which had been used at least once before.
Aging Potential
This wine will continue to improve with bottle maturation. Sparkling wines will mature somewhat more slowly than still table wines, but can become magnificently complex and elegant. This wine has wonderful potential to do just that. It will be brilliant in 2012!!!
