2001 SPARKLING CABERNET SAUVIGNON

Colour
Deep red and bright - very typical of Cape d'Estaing wines. With its streams of fine bubbles it looks wonderful in a tall sparkling glass.
Nose
Lifted, berried and elegant. The distinctly cabernet sauvignon varietal aromas are leafy, chocolatey and spicey.
Palate
The palate is medium bodied and flavoursome but still retains the elegant style suggested by the nose. The wine is relatively dry for a sparkling red wine, and the bead is fine and persistent. This is a complex and mature style of sparkling red, not just a simple young “fruit-bomb”!!
Oak
This wine has seen prolonged oak maturation – nearly 28 months. We believe that the base wine must be fully complex and developed before it goes into bottle for it to reach its full potential. This wine saw predominantly French oak which had been used at least once before.
Aging Potential
This wine will continue to improve with bottle maturation. Sparkling wines will mature somewhat slower than still table wines, but can become magnificently complex and elegant. This wine has wonderful potential to do just that. It will be brilliant in 2010!!
Growing Season
2000/2001 was a wonderful growing season. We had quite a wet spring which was followed by an early, warm and dry summer. The season was disease-free. Cabernet sauvignon was picked on 19th March at about 13.7°Bé.
