CABERNET SAUVIGNON |
| Colour |
Very dark deep reddish-black. |
| Nose |
Distinctively cabernet
with strong berry herbaceous aromas showing through the slightly
charry oak background. |
| Palate |
Elegant cabernet flavours
are already integrating well with the oak. Palate is long and
firm, showing pleasantly grainy tannins which are softening
and rounding well as it develops. |
| Oak |
About 65% French, mainly
225L barriques. New % kept to approx 70% with balance once or
twice used. |
| Aging
Potential |
Well-made cabernets
are invariably wines which mature well in bottle and this wine
is no exception. It will peak in a couple of years (say 2005
- 2006) but will age gracefully well beyond that. |
| Growing
Season |
It was extremely dry
from spring all the way through vintage. Temperatures were mild
and, with a generally windy summer, the growing season was disease
free. These conditions produced a very low yield of sound, full-flavoured
and beautifully coloured fruit. Fruit was picked on March 14th
at 13.5° baume. |
