CABERNET SAUVIGNON |
| Colour |
Dense, thick-looking
with now a trace of development. |
| Nose |
Lifted nose with black
currants, cedar, spice and minerals. |
| Palate |
Medium to full-bodied,
with concentrated flavours which are maturing beautifully. Already
complex and lingering with fine and persistent tannins which
give wonderful structure and longevity. |
| Oak |
About 70% French, with
nearly all of it being new barriques (225L). Balance in American
oak. 16 months aging. |
| Aging
Potential |
Will be at its best
in about 2006-2007. Has such richness and such good structure
that it will age very well for at least a further 8-10 years.
Great now, (Sept 2003) |
| Growing
Season |
1997/1998 was a very
good growing season. Spring was cool and moist and led to a
dry warm long summer. Crop levels were small and the fruit was
magnificent - small bunches, small very dark berries and huge
flavour. The cabernet was harvested in the end of the second
week of March at 13.6° Bé. |
