CABERNET SAUVIGNON |
| Colour |
Dark, deep reddish-black |
| Nose |
Lifted cassis-like aromas
come up strongly from the underlying varietal cabernet sauvignon
herbaceousness. The French oak adds to the complexity of the
nose. |
| Palate |
This is showing flavour
and richness with a most attractive level of development and
complexity. The cassis and soft oak spiciness both add to what
is a long, rich palate. The tannins are fine and elegant and
are already showing softness |
| Oak |
Predominantly French |
| Aging
Potential |
This wine will follow
the Caped'Estaing mould and will continue to develop gracefully.
It will improve by virtue of increasing complexity for 5 or
more years at least. |
| Growing
Season |
Spring was mild and
wet with November being the coolest on record. This affected
flowering and fruit set, producing a very low crop. Summer was
generally warm to hot and dry, apart from a couple of brief
rainy periods during February. The fruit was picked at 14°
baume on February 27. |
