2000 CABERNET SAUVIGNON

Colour

Dark, deep reddish-black
Nose Lifted cassis-like aromas come up strongly from the underlying varietal cabernet sauvignon herbaceousness. The French oak adds to the complexity of the nose.
Palate This is showing flavour and richness with a most attractive level of development and complexity. The cassis and soft oak spiciness both add to what is a long, rich palate. The tannins are fine and elegant and are already showing softness
Oak Predominantly French
Aging Potential This wine will follow the Caped'Estaing mould and will continue to develop gracefully. It will improve by virtue of increasing complexity for 5 or more years at least.
Growing Season Spring was mild and wet with November being the coolest on record. This affected flowering and fruit set, producing a very low crop. Summer was generally warm to hot and dry, apart from a couple of brief rainy periods during February. The fruit was picked at 14° baume on February 27.
